Oleoresins are nothing but spice extracts, obtained by solvent extraction of respected spices, followed by the standardisation of the active ingredients which gives the typical flavour, colour and aroma for a particular spice. The advantage of using oleoresins over natural spices include consistency in quality, reduced dosage, increased shelf life due to no bacterial contamination and easy standardisation.
The active ingredient is capsaicin, which is a chemical derived from the fruit of plants in the Capsicum genus, including chilis. Extraction of oleoresin capsicum (OC) from peppers requires capsicum to be finely ground, from which capsaicin there are two types Oil soluble and Water soluble which is they have different function in food applications. Paprika oleoresin (also known as paprika extract) is an oil-soluble extract from the fruits of Capsicum annuum or Capsicum frutescens, and is primarily used as a colouring and/or flavouring in food products. It is composed of capsaicin, the main flavouring compound giving pungency in higher concentrations, and capsanthin and capsorubin, the main colouring compounds (among other carotenoids). Extract from fresh garlic and is normally used for food additive to replace the garlic fresh and more efficient in costing, for the odor and taste are mainly for flavouring compound giving strong garlic smell in food products.
